For those of you missing the tastes of Bali, I thought I would share one of my favourite recipes.
Arie’s corn fritters or Perkedel Jagun.
They are easy to make, delicious and can be eaten at any time of the day. Try them with a poached egg for breakfast.

You can pop all the ingredients into a blender for ease
5 large sweet corn, removed from the husk
5 shallots or 2 small brown onions, chopped
2 spring onions, chopped
4 stalks of celery, chopped
5 tablespoons plain flour
2 eggs
Season with salt and pepper
some lemongrass is a nice addition
Heat some oil in a frying pan and place large spoons into the oil to create the fritter.
Fry until cooked and drain on kitchen paper.
